The word "noon" in Hebrew is written "צָהֳרַיִם" and should be pronounced "tsohorayim", but many people are used to say "tsaharayim", and this version is very common in spite of being in principle incorrect...
This is not rare in Hebrew that words are pronounced in different ways - this is part of the development of the language that still takes place nowadays.

Why is this word not romanized as:

Is there a rule to do a right spelling of this צָ sound, as «o» and not as «a»? At least sometimes?

"early" afternoon is not a well defined time. Since צהרים (noon) is 12:00, and "אחר הצהריים" is afternoon (everything between noon to evening, but usually refers to the later hours), the "early afternoon" will probably be the first few hours after 12, I'd say from 12:00 to 14:00...
The word צהרים does use the plural form, but it has no singular in Hebrew. The same applies to another word you might know: חיים (life), מים (water) and others.

What does mean "early" afternoon? Which time you can say צהריים טובים
2 pm, 3 pm, 4 pm?
And another question: The words look like plural. Is it? If yes, does exist a singular form of צהריים?
